Strawberry Cobbler
Strawberry Cobbler Ingredients For Dough
2 1/2 cups of flour
5 tablespoons sugar
2 1/2 teaspoons baking powder
1/4 ounces cold, unsalted butter
1 cup cold heavy cream
Ingredients for Filling
8 pints of strawberries
3/4 cup sugar
Juice from one lemon
3 tablespoons cornstarch
Ingredients for egg wash
1 egg, whisked with 1 teaspoon water
1/4 cup sugar
Preheat oven to 325 degrees F.
In a mixing bowl fitted with the paddle attachment, combine flour, sugar, baking powder, and salt. Add cold butter and combine mixture until the butt is the size of English peas. Slowly add cream until the dough just comes together, Roll out dough to about 1/4 inch thickness.
In a separate bowl, combine starberries, sugar, lemon juice and cornstarch. Transfer fruit mixture to a 9″ x 13″ baking dish and to with dough. Brush egg and wash over dough and sprinkle with about 1/4 cup sugar
Bake for 35 minutes until bubbly and golden brown
