Strawberry Shortcakes
This will make about ten servings
Ingredients
2 1/4 cups self rising flour
1/4 cup of sugar
1 pinch of salt
1/2 teaspoon orange sest
1 and 1/4 cup of heavy cream, plus some for brushing
1/2 teaspoon vanilla extract
1/4 to 1/2 cup raw sugar for coating shortcakes
Preheat oven to 350 degrees F.
In a large bowl, sift together flour, sugar, salt, and orange zest. Grate cold butter with large grater and combine with dry ingredients. Combine heavy cream and vanilla extract, and pour over dry ingredients. Stir until flour is incorporated.
Using 4 ounce cookie scoop, scoop dough onto a baking sheet lined with parchment paper. brush dough with heavy cream and sprinkle with raw sugar. Bake for 15 to 20 minutes and then let cool.
Ingredients for filling
Macerated strawberries
2 quarts of strawberries, hulled andsliced
Juice of 1/2 lemon
1/2 cup of sugar
Pinch of salt
Place strawberries in large bowl, Add lemon, sugar, and salt. toss to coat. Cover and let strawberries macerate at room temperature for 2 hours
Ingredients for whipped cream
2 cups heavy whipping cream
1/4 cup mascarpone cheese
1/2 cup powdered sugar
Using mixer, whip all ingredients together until whipped cream is formed.
To assemble. Slice shortcakes in half and scoop strawberries and whipped cream onto bottom half. Place other half on top,
